Yes you can! Many of you have written to ask if it is possible to eat hominy on the keto diet. Hominy, or hominy grits, are processed corn kernels, often ground into a coarse meal, sometimes seasoned and cooked to a mushy consistency.
This is one of the first recipes I learned to make when I went on a low carb diet and I still use this recipe to make hominy grits when I need something quick and easy to make.
The first step is to soak the hominy grits in water overnight, or for at least 6 hours. This is because hominy absorbs some of the water during processing, so soaking it for longer will result in a thinner hominy.
Soaking the hominy grits also makes it easier to remove the grits from your blender, since you can see through the hominy more easily.
Once soaked, drain the hominy grits. In a large pot, combine the hominy grits with enough water to cover the hominy and bring it to a boil over medium heat. Turn the heat down and simmer the hominy grits, stirring occasionally, until it gets creamy and thick, about 30 minutes.
Remove the hominy grits from the heat and let them cool slightly before using them in your recipes. Hominy grits are delicious served alongside breakfast meats like bacon, sausage, or ham, and they are also great as a side dish, as they absorb some of the fat from the meat or chicken. Hominy grits can be refrigerated for up to three days and frozen for up to six months.
